Strawberry French Toast Muffins (Print Version)

# Ingredients:

→ Base

01 - 12 slices white bread
02 - 1/4 cup whole milk
03 - 1 tablespoon light brown sugar
04 - 2 eggs
05 - 1/2 teaspoon vanilla
06 - 1 tablespoon unsalted butter, melted

→ Filling

07 - 4 oz cream cheese, softened
08 - 1 tablespoon sour cream
09 - 1 tablespoon sugar
10 - 1/4 teaspoon vanilla
11 - 1/3-1/2 cup diced strawberries

→ Topping & Glaze

12 - 4 tablespoons light brown sugar
13 - 1/4-1/2 teaspoon cinnamon
14 - 1/4 cup powdered sugar
15 - 1 teaspoon milk

# Instructions:

01 - Preheat oven to 350°F. Brush muffin pan with melted butter. Cut bread using 4-inch cutter for bases and 3-inch cutter for tops.
02 - Mix cream cheese, sour cream, vanilla, and sugar until smooth. Fold in diced strawberries.
03 - Whisk eggs, milk, brown sugar, and vanilla.
04 - Dip larger bread circles in egg mixture, press into muffin cups. Add filling.
05 - Dip smaller bread circles in egg mixture, place on filling. Press edges to seal well.
06 - Sprinkle with cinnamon-sugar mixture. Bake 25 minutes until golden. Cool 5-10 minutes.
07 - Mix powdered sugar and milk until smooth. Drizzle over cooled muffins.
