Creamy Beef and Shells (Print Version)

# Ingredients:

→ Protein & Pasta

01 - 1 pound lean ground beef or turkey
02 - 6 oz shell pasta

→ Seasonings & Aromatics

03 - 2 teaspoons Italian seasoning, divided
04 - 1 teaspoon Worcestershire sauce
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon smoked paprika
07 - Salt and pepper to taste
08 - 1/2 cup diced onions

→ Sauce & Vegetables

09 - 2 tablespoons tomato paste
10 - 3 cups broth
11 - 2 cups fresh spinach
12 - 2 cups grated cheddar cheese
13 - 1 1/2 cups plain Greek yogurt, room temperature

# Instructions:

01 - Brown the ground beef in a skillet over medium heat for 4-5 minutes until no longer pink. Drain excess fat
02 - Add Worcestershire sauce, onions, half the Italian seasoning, smoked paprika, garlic powder, salt and pepper. Cook until onions soften
03 - Stir in tomato paste, shells, broth, and remaining Italian seasoning. Make sure pasta is covered with liquid
04 - Cover and cook on low for 10-15 minutes, stirring occasionally, until pasta is tender
05 - Mix in cheddar and spinach until cheese melts and spinach wilts
06 - Let cool 5-10 minutes, then stir in room temperature Greek yogurt

# Notes:

01 - Add extra broth if pasta seems dry during cooking
02 - Let dish cool before adding yogurt to prevent curdling
03 - Can substitute soy sauce for Worcestershire if needed
