Creamy Cajun Shrimp Pasta with Sausage (Print Version)

# Ingredients:

→ For the Protein

01 - 1 lb large shrimp, peeled and deveined
02 - 6 oz beef or smoked sausage, thinly sliced

→ For the Pasta

03 - 10 oz fettuccine pasta (or your favorite pasta)

→ For the Sauce & Veggies

04 - 2 tbsp olive oil
05 - ½ yellow onion, thinly sliced
06 - 1 red bell pepper, thinly sliced
07 - 3 cloves garlic, minced
08 - 1 tsp Cajun seasoning (or Creole seasoning)
09 - ½ tsp dried oregano
10 - ½ cup crushed tomatoes
11 - 1 cup chicken stock
12 - ½ cup heavy cream
13 - ½ cup grated Parmesan cheese

→ For Seasoning

14 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - In a bowl, toss shrimp with Cajun seasoning, oregano, salt, and pepper. Heat 1 tbsp olive oil in a large skillet over medium heat. Sauté shrimp for 2–3 minutes per side until pink and lightly browned. Remove and set aside.
02 - In the same skillet, heat the remaining 1 tbsp olive oil. Add sliced sausage and brown on both sides. Remove and set aside.
03 - Add onions, bell peppers, and garlic to the skillet. Cook for 5 minutes or until soft and fragrant.
04 - Stir in crushed tomatoes and chicken stock. Bring to a simmer. Add heavy cream and Parmesan cheese, stirring until smooth and slightly thickened. Taste and adjust seasoning with more Cajun spice, salt, or pepper if needed.
05 - While the sauce simmers, cook pasta according to package directions. Drain and add to the sauce.
06 - Return shrimp and sausage to the skillet. Toss well with the pasta until evenly coated and heated through.
07 - Garnish with chopped fresh parsley and extra Parmesan if desired.
