Creamy Crack Chicken Gnocchi (Print Version)

# Ingredients:

01 - 2 small chicken breasts (360g).
02 - 75g lean smoked back bacon, diced.
03 - 3½ cups low sodium chicken stock.
04 - 500g potato gnocchi (vacuum packed).
05 - 1 shallot, finely diced.
06 - 2 cloves garlic, minced.
07 - ½ cup 2% milk.
08 - ½ tablespoon lemon juice.
09 - 175g Laughing Cow light cheese.
10 - ½ tablespoon cornstarch.
11 - 60g fresh grated cheddar.
12 - 1 teaspoon dried parsley.
13 - 1 teaspoon dried chives.
14 - 1 teaspoon onion powder.
15 - ½ teaspoon dried dill.
16 - ½ teaspoon garlic powder.
17 - Salt and pepper to taste.
18 - Fresh parsley for garnish.

# Instructions:

01 - Poach chicken in 2 cups stock for 10-12 minutes until cooked through, then slice.
02 - Cook diced bacon with oil spray until golden and crispy.
03 - In same pan, soften shallot then add garlic and cook briefly.
04 - Add remaining stock, milk, lemon juice, seasonings and cheese, then whisk in cornstarch.
05 - Add chicken and gnocchi, bring to boil then simmer 5 minutes until thick.
06 - Move to baking dish, top with cheese and broil until melted, then add bacon and herbs.

# Notes:

01 - Use freshly grated cheese for best melting.
02 - Can use chicken poaching liquid in sauce.
03 - Make sure sauce bubbles to thicken.
