Creamy Crack Chicken Soup (Print Version)

# Ingredients:

01 - 4 slices bacon, diced.
02 - 1 tablespoon butter.
03 - 1 white onion, diced.
04 - 3 cloves garlic, minced.
05 - 5 cups low-sodium chicken broth.
06 - 3 bay leaves.
07 - 1 teaspoon garlic powder.
08 - 1 teaspoon onion powder.
09 - ½ teaspoon dried dill.
10 - ½ teaspoon dried chives.
11 - Salt and pepper to taste.
12 - 4 cups cooked chicken, shredded.
13 - 8 ounces cream cheese.
14 - 1 cup cheddar cheese, grated.
15 - 4 cups baby spinach.
16 - ¼ cup heavy cream.
17 - Fresh dill and scallions for garnish.

# Instructions:

01 - Cook diced bacon in large pot for 5 minutes. Remove bacon, keep fat.
02 - Add butter and onion, cook 3 minutes. Add garlic for 20 seconds.
03 - Add broth, seasonings. Simmer 5 minutes.
04 - Stir in shredded chicken, simmer 5 minutes.
05 - Add cheeses, whisk until melted. Add spinach and cream, simmer 3 minutes.
06 - Remove bay leaves. Top with bacon, dill, scallions.
