Creamy Garlic Parmesan Chicken (Print Version)

# Ingredients:

01 - 2 chicken breasts.
02 - ½ teaspoon kosher salt.
03 - ½ teaspoon black pepper.
04 - ¼ cup all-purpose flour.
05 - 2 tablespoon olive oil.
06 - 3 tablespoons butter, divided.
07 - 6 cloves garlic, finely chopped.
08 - 2 tablespoon dry sherry (optional).
09 - ¾ cups chicken broth.
10 - 1 ¼ cups heavy cream.
11 - ½ teaspoon Dijon mustard.
12 - ½ cup grated parmesan.
13 - Fresh parsley for garnish.

# Instructions:

01 - Pat dry chicken breasts and cut each breast horizontally into two even fillets.
02 - Season chicken with salt and pepper, then coat lightly in flour.
03 - Heat oil and butter in pan over medium-high heat. Cook chicken 3-4 minutes per side until golden.
04 - Cook garlic in butter until soft. Add flour from dredging and stir.
05 - Add broth and sherry, then cream, mustard, and parmesan. Simmer until thickened.
06 - Return chicken to pan and cook 2-3 minutes more. Garnish with parsley and serve.

01 - Larger chicken breasts work best for this recipe.
02 - Can substitute chicken thighs, cooking for 15-20 minutes.
03 - White wine or marsala can replace sherry.
