Bacon Green Bean Dish (Print Version)

# Ingredients:

01 - 150g/5oz streaky bacon, chopped.
02 - 2 garlic cloves, finely minced.
03 - 500g/1lb green beans, trimmed and cut into 2" pieces.
04 - 1/2 cup low-sodium chicken or vegetable stock.
05 - 1 cup heavy cream.
06 - 1/2 cup finely grated parmesan.
07 - Fresh ground black pepper.

# Instructions:

01 - Put bacon in cold skillet and turn heat to high. Cook 2-3 minutes until golden. Remove with slotted spoon.
02 - Leave 1.5 tablespoons bacon fat in pan, discard rest.
03 - Cook garlic 10-15 seconds until light golden.
04 - Add beans, stir to coat in fat.
05 - Add stock, cover, and simmer 3 minutes until beans are tender-crisp and bright green.
06 - Add cream, parmesan, and pepper. Simmer 2 minutes until sauce thickens.
07 - Taste for salt, then transfer to bowl and top with bacon.

# Notes:

01 - Can use light cream or evaporated milk instead of heavy cream.
02 - Starting bacon in cold pan helps fat render better.
03 - Sauce thickens as it cools.
04 - Can be served over pasta or rice for a main dish.
05 - For thicker sauce, simmer 1-2 minutes longer.
