Sausage Soup (Print Version)

# Ingredients:

01 - 2 tbsp olive oil.
02 - 1 lb Italian sausage, casings removed.
03 - 1 large onion, chopped.
04 - 3-4 cloves garlic, minced.
05 - 1 cup sliced mushrooms.
06 - 4 cups chicken broth.
07 - 1½ cups diced tomatoes.
08 - 2 tsp Italian seasoning.
09 - Salt and pepper to taste.
10 - 2 cups heavy whipping cream.
11 - 1½ cups grated Parmesan cheese, divided.
12 - 2 cups baby spinach, stems removed.

# Instructions:

01 - Heat oil and brown sausage in Dutch oven.
02 - Add onion and garlic, cook until translucent.
03 - Add mushrooms, cook 4 minutes.
04 - Add broth, tomatoes, seasonings; simmer 10 minutes.
05 - Reduce heat, add cream and 1¼ cups Parmesan.
06 - Add spinach, cook until wilted.
07 - Top with remaining Parmesan before serving.

# Notes:

01 - Can use turkey sausage for lighter version.
02 - Not recommended for freezing due to cream base.
