Creamy Tomato Spinach Pasta (Print Version)

# Ingredients:

→ Pasta

01 - 1/2 pound penne pasta

→ Sauce Base

02 - 1 yellow onion, diced
03 - 2 cloves garlic, minced
04 - 1 tablespoon olive oil
05 - 1 can (15 oz) diced tomatoes
06 - 2 tablespoons tomato paste

→ Seasonings

07 - 1/2 teaspoon dried oregano
08 - 1/2 teaspoon dried basil
09 - 1/2 teaspoon salt
10 - Fresh black pepper to taste
11 - Pinch of crushed red pepper (optional)

→ Creamy Elements

12 - 2 ounces cream cheese
13 - 1/4 cup grated Parmesan

→ Vegetables

14 - 4 ounces fresh spinach

# Instructions:

01 - Boil pasta in large pot until tender, about 7-10 minutes. Drain in colander
02 - Sauté diced onion and minced garlic in olive oil over medium heat until soft, about 3-5 minutes
03 - Add tomatoes, herbs, seasonings, tomato paste and 1/2 cup water. Stir to combine
04 - Reduce heat to low. Whisk in cream cheese pieces until melted, then stir in Parmesan until smooth
05 - Stir in spinach until wilted, about 2-3 minutes
06 - Toss pasta with sauce, taste and adjust seasoning as needed
