Creamy Tuscan Chicken Pasta (Print Version)

# Ingredients:

01 - 2 pounds chicken breasts, boneless and skinless.
02 - ½ teaspoon salt.
03 - ½ teaspoon fresh ground pepper.
04 - 2 tablespoons olive oil.
05 - 2 tablespoons unsalted butter.
06 - 3 cloves garlic, minced.
07 - 1 cup sun-dried tomatoes, drained and chopped.
08 - 1 tablespoon Italian seasoning.
09 - 1 cup heavy cream.
10 - 2 cups milk.
11 - 1 cup freshly grated Parmesan cheese.
12 - 8 ounces penne pasta, uncooked.
13 - 3 cups baby spinach.

# Instructions:

01 - Season chicken with salt and pepper, cook in olive oil 3-4 minutes per side until browned. Remove and cut into 1-inch pieces.
02 - Melt butter in pot, add garlic, sun-dried tomatoes, and Italian seasoning until fragrant.
03 - Add cream, milk, Parmesan, and penne. Cook 10 minutes until pasta is al dente.
04 - Return chicken to pot, add spinach and cook 1-2 minutes until heated through and spinach wilts.

01 - Can add additional vegetables.
02 - Lighter cream options possible but sauce won't be as thick.
03 - Freezes well up to 6 months.
