Crispy Feta Fried Eggs (Print Version)

# Ingredients:

→ For the Eggs

01 - 1 large egg
02 - 20 grams feta cheese
03 - Cooking oil spray or olive oil spray
04 - Dried oregano
05 - Red pepper flakes

→ For Serving

06 - 1 small tortilla or slice of toasted bread
07 - 1/4 avocado
08 - Lemon juice
09 - Pickled onions (for garnish)
10 - Chili oil (for garnish)

# Instructions:

01 - Spray a small frying pan or skillet with cooking oil or olive oil spray. Crumble the feta cheese all over the pan, ensuring the edges are also covered with cheese.
02 - Heat the pan over medium heat and allow the feta cheese to sizzle and sauté for a couple of minutes. The cheese should melt and begin to form a crust without burning.
03 - Gently crack the egg in the center of the pan on top of the melting feta cheese.
04 - Season the egg with a sprinkle of dried oregano and red pepper flakes. Allow the egg to cook to your preferred doneness (whether that's medium or with a runny yolk).
05 - While the egg is cooking, warm the tortilla on a gas stove, in the oven, or in the microwave. Mash the avocado on top of the warm tortilla and add a squeeze of lemon juice.
06 - Once the egg is cooked and the cheese has created a golden brown crust, carefully remove it from the pan using a spatula and place it on top of the avocado-covered tortilla.
07 - Top with pickled onions and a drizzle of chili oil. Serve immediately while still warm.

# Notes:

01 - For a crispy cheese crust, make sure to spread the feta all the way to the edges of the pan
02 - This recipe can easily be doubled or tripled for multiple servings
