Spray a small frying pan or skillet with cooking oil or olive oil spray. Crumble the feta cheese all over the pan, ensuring the edges are also covered with cheese.

Heat the pan over medium heat and allow the feta cheese to sizzle and sauté for a couple of minutes. The cheese should melt and begin to form a crust without burning.

Gently crack the egg in the center of the pan on top of the melting feta cheese.

Season the egg with a sprinkle of dried oregano and red pepper flakes. Allow the egg to cook to your preferred doneness (whether that's medium or with a runny yolk).

While the egg is cooking, warm the tortilla on a gas stove, in the oven, or in the microwave. Mash the avocado on top of the warm tortilla and add a squeeze of lemon juice.

Once the egg is cooked and the cheese has created a golden brown crust, carefully remove it from the pan using a spatula and place it on top of the avocado-covered tortilla.

Top with pickled onions and a drizzle of chili oil. Serve immediately while still warm.
