Heat oven to 425°F. Place racks in upper and lower thirds.

Line two baking sheets with parchment.

Peel potatoes, cut into 1/4" fries.

Divide fries between sheets.

Sprinkle each pan with 1 1/2 tsp cornstarch, 1/4 tsp salt.

Add 1 tbsp oil per pan, toss to coat evenly.

Arrange in single layer, not crowded.

Bake 20 minutes, then flip fries.

Swap pan positions, bake 10-18 minutes until crispy.
