Sweet Potato Fries (Print Version)

# Ingredients:

01 - 2 lbs sweet potatoes (2-3 medium).
02 - 1 tbsp cornstarch.
03 - 1/2 tsp fine sea salt.
04 - 2 tbsp extra-virgin olive oil.
05 - Optional Seasonings: Black pepper.
06 - Optional Seasonings: Cayenne pepper.
07 - Optional Seasonings: Garlic powder.

# Instructions:

01 - Heat oven to 425°F. Place racks in upper and lower thirds.
02 - Line two baking sheets with parchment.
03 - Peel potatoes, cut into 1/4" fries.
04 - Divide fries between sheets.
05 - Sprinkle each pan with 1 1/2 tsp cornstarch, 1/4 tsp salt.
06 - Add 1 tbsp oil per pan, toss to coat evenly.
07 - Arrange in single layer, not crowded.
08 - Bake 20 minutes, then flip fries.
09 - Swap pan positions, bake 10-18 minutes until crispy.
10 - Season as desired.

# Notes:

01 - Don't overcrowd pans for crispiness.
02 - Cut uniform sizes for even cooking.
03 - Can prep 2 days ahead stored in water.
04 - Reheat in oven to restore crispness.
