# Ingredients:

01 - 1 ½ pounds zucchini (about 3 medium).
02 - 1 teaspoon salt.
03 - ½ cup all purpose flour.
04 - ¼ cup grated Parmesan cheese.
05 - 1 large egg, whisked.
06 - 2 garlic cloves, finely minced.
07 - ¼ teaspoon black pepper.
08 - 2 tablespoons olive oil.

# Instructions:

01 - Preheat oven to 350°F.
02 - Grate zucchini, sprinkle with salt and let sit 10-15 minutes. Strain excess moisture using cheesecloth.
03 - Combine strained zucchini, flour, cheese, egg, garlic, and pepper in a large bowl.
04 - Form 8 equal balls (2-3 tablespoons each).
05 - Heat oil in skillet, flatten balls to ½-inch thick, sear 2-3 minutes per side until brown.
06 - Place all fritters in skillet and bake 10-15 minutes.
