In a skillet, cook the Italian sausage until browned, if using. Drain excess fat and set aside.

In a crockpot, combine chicken broth, heavy cream, Parmesan cheese, garlic powder, Italian seasoning, and black pepper. Add the browned sausage (if using) and spinach.

Cover and cook on low for 3-4 hours.

Stir in the tortellini and mozzarella cheese. Cook on high for an additional 30 minutes, until the tortellini is tender and the cheese is melted.

Serve warm with extra Parmesan cheese on top.
