Heat oven to 375°F. Cut tops off apples and hollow out centers with a spoon, keeping walls thick. Save about 1/2 cup apple flesh.

Mix oats, flour, both sugars, cinnamon, nutmeg, and salt in bowl. Cut in butter until crumbly.

Fill apples with mixture, letting it overflow slightly. Bake 35-40 minutes until apples soften and filling browns.

For custard: Whisk egg yolks and sugar until pale and thick.

Heat milk until bubbles form at edges. Add 2 tablespoons hot milk to eggs, whisk quickly.

Pour egg mixture into milk pan. Cook on medium-low, stirring until thickened, 2-3 minutes.

Remove from heat, add vanilla. Strain through fine mesh sieve.
