Stuffed Baked Apples (Print Version)

# Ingredients:

01 - 6 large apples.
02 - 1 cup old-fashioned rolled oats.
03 - 1/2 cup all-purpose flour.
04 - 2/3 cup packed brown sugar.
05 - 1/3 cup granulated sugar.
06 - 1 teaspoon ground cinnamon.
07 - 1/4 teaspoon ground nutmeg.
08 - Pinch of kosher salt.
09 - 6 tablespoons salted butter, cubed.
10 - Cinnamon sticks for garnish.
11 - 4 egg yolks.
12 - 1/2 cup granulated sugar.
13 - 1 cup whole milk.
14 - 1 teaspoon vanilla extract.

# Instructions:

01 - Heat oven to 375°F. Cut tops off apples and hollow out centers with a spoon, keeping walls thick. Save about 1/2 cup apple flesh.
02 - Mix oats, flour, both sugars, cinnamon, nutmeg, and salt in bowl. Cut in butter until crumbly.
03 - Fill apples with mixture, letting it overflow slightly. Bake 35-40 minutes until apples soften and filling browns.
04 - For custard: Whisk egg yolks and sugar until pale and thick.
05 - Heat milk until bubbles form at edges. Add 2 tablespoons hot milk to eggs, whisk quickly.
06 - Pour egg mixture into milk pan. Cook on medium-low, stirring until thickened, 2-3 minutes.
07 - Remove from heat, add vanilla. Strain through fine mesh sieve.
08 - Let apples cool 15 minutes. Serve with warm custard and cinnamon sticks.

# Notes:

01 - Can make custard several days ahead.
02 - Cover custard with plastic wrap to prevent skin.
03 - Custard is done when it coats back of spoon.
04 - Let apples rest before serving to prevent burning.
