Deep Fried S'mores (Print Version)

# Ingredients:

→ S'mores

01 - 9 graham cracker sheets
02 - 2 cups mini marshmallows
03 - 2 cups chocolate chips or 8 oz baking chocolate, divided

→ Batter

04 - 2 large eggs
05 - 2 tsp oil
06 - 1 1/2 cups milk
07 - 2 1/4 cups all-purpose flour
08 - 6 tbsp granulated sugar
09 - 1 tsp baking powder
10 - 1/4 tsp salt

→ Frying & Serving

11 - 1 quart vegetable oil for frying
12 - powdered sugar (optional for serving)

# Instructions:

01 - Line an 8x8-inch pan with parchment paper. Arrange graham crackers to cover the bottom, breaking sheets if needed to fit. Place 1 cup of chocolate chips in a bowl and microwave in 30-second intervals until smooth, stirring in between.
02 - Drizzle 1/3 of melted chocolate onto the graham crackers, followed by the remaining chocolate chips, 1/3 more melted chocolate, the marshmallows, and finally the remaining melted chocolate. Top with another layer of graham crackers based on the reference diagram, and place the pan in the refrigerator for 10 minutes.
03 - In a medium bowl, whisk together eggs, oil, and milk. In a separate bowl, mix flour, sugar, baking powder, and salt. Combine wet and dry mixtures and whisk until smooth.
04 - In a medium saucepan or deep fryer, heat vegetable oil to a temperature of 425°F.
05 - Remove s'mores from the fridge. Using the parchment paper, lift them onto a work surface. Cut into a 6x6 grid to create 36 pieces. Use melted chocolate to 'glue' broken pieces.
06 - Dip each s'mores piece into the batter, ensuring full coverage, and let excess drip off. Place in the hot oil and fry for about 1 minute until golden and puffed. Transfer to a paper towel-lined plate.
07 - Repeat battering and frying for remaining pieces. Dust with powdered sugar if desired. Serve warm and enjoy.
