In a saucepan over low heat, melt the butter and mini marshmallows together until smooth. Stir in the vanilla extract thoroughly.

Add the shredded coconut to the melted mixture, stirring until the coconut is evenly coated. Allow the mixture to cool slightly.

Using your hands, shape the mixture into 1½-inch balls, then pinch one end of each ball lightly to create a teardrop shape.

Melt the white chocolate chips in a heatproof bowl set over simmering water or in a microwave. Dip each bunny tail halfway into the melted white chocolate and place on a sheet of parchment paper.

Drizzle the dipped bunny tails with melted pink candy melts for decoration. Chill in the refrigerator until set.
