Easy Chicken Piccata (Print Version)

# Ingredients:

→ Chicken

01 - 1 pound chicken breasts, halved horizontally and pounded thin
02 - 1 teaspoon lemon pepper seasoning or lemon zest
03 - ¼ teaspoon salt
04 - ¼ cup all-purpose flour

→ Cooking Fats

05 - 6 tablespoons butter, divided
06 - 2 tablespoons olive oil, divided

→ Sauce

07 - 2 teaspoons minced garlic
08 - 2 tablespoons all-purpose flour
09 - 1 cup chicken stock
10 - ¼ cup dry white wine
11 - 2 tablespoons lemon juice
12 - 3 tablespoons capers, brined and rinsed
13 - 2 tablespoons fresh parsley, chopped

# Instructions:

01 - Season chicken with lemon pepper and salt. Coat in flour
02 - Heat 1 tablespoon each butter and oil. Cook 2 chicken pieces until golden, 3-4 minutes per side. Remove to plate
03 - Repeat with 1 tablespoon each butter and oil for remaining chicken. Remove from pan
04 - Melt 3 tablespoons butter, cook garlic 30 seconds. Whisk in flour. Add wine and scrape pan. Add stock, lemon juice, and capers. Simmer 5 minutes
05 - Add final tablespoon butter to sauce. Return chicken to pan, simmer 5 minutes. Garnish with parsley

02 - Can garnish with extra lemon wedges
