Easy Croissant Breakfast Sandwich (Print Version)

# Ingredients:

01 - 8 croissants
02 - 8 slices American cheese
03 - 8 slices ham or cooked bacon
04 - 8 large eggs
05 - 3 tablespoons oil for frying
06 - Freshly ground black pepper to taste

# Instructions:

01 - Slice all croissants in half horizontally and arrange cut-side up on a sheet pan. Broil for 2-3 minutes until lightly toasted and golden. Remove and set aside.
02 - Heat oil in a large non-stick skillet over high heat. Crack all eggs into the skillet, breaking the yolks immediately for even cooking.
03 - Reduce heat to medium-low and sprinkle eggs with pepper. Cook thoroughly, flipping once, until eggs are cooked through and no longer runny.
04 - Place 1 slice of ham (or half a slice of bacon if using) on the bottom half of each toasted croissant. Top with a cooked egg and a slice of American cheese.
05 - Top with the other croissant half and microwave each sandwich for 15 seconds to melt the cheese. Serve immediately while hot and crispy.

# Notes:

01 - For extra flavor, brush croissant tops with sweet mustard sauce before broiling (mix 4 tbsp melted butter, 2 tbsp brown sugar, 2 tsp yellow mustard)
02 - These can be made ahead - cool completely before wrapping and store in fridge or freezer
03 - To reheat, microwave for 30 seconds or until warmed through
04 - Frozen sandwiches keep for up to 3 months and can be reheated from frozen
