01 - 1 pound lean ground beef
02 - 1 small onion, peeled and diced
03 - 1 package taco seasoning mix
04 - 2/3 cup water
05 - 1 can (10 ounce) enchilada sauce
06 - 1 can (15 ounce) pinto beans, drained and rinsed
07 - 1 bag (9.25 ounce) Fritos corn chips, divided
08 - 2 cups shredded Mexican blend cheese, divided
09 - 1 green onion, chopped
10 - Sour cream for garnish
11 - Prepared guacamole for garnish

# Instructions:

01 - Preheat the oven to 350ºF. Spray a 9x13-inch glass baking dish with non-stick cooking spray.
02 - Crumble the ground beef into a large skillet. Add the diced onions and cook over medium heat, stirring often, until the beef is fully browned. Drain off any excess fat.
03 - Stir in the taco seasoning mix and water. Bring to a simmer and cook for 3-4 minutes, stirring often.
04 - Add the enchilada sauce and pinto beans to the skillet, mixing well.
05 - Pour 4 cups of Fritos into the bottom of the prepared baking dish. Sprinkle evenly with 1 cup of shredded cheese. Spread the meat mixture evenly over the chips, then top with the remaining cheese.
06 - Bake in the preheated oven for 18-20 minutes until heated through and bubbling.
07 - Sprinkle the remaining Fritos over the top of the casserole. Let cool slightly before serving. Serve with chopped green onions, sour cream, and guacamole.
