Easy Grasshopper Cake Mix Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 box (15.25 oz) chocolate cake mix
02 - ½ cup canola oil
03 - 2 large eggs

→ Mint Buttercream

04 - ½ cup unsalted butter, room temperature
05 - 2 cups powdered sugar
06 - 1 teaspoon mint extract
07 - ¼ teaspoon salt
08 - Green food coloring
09 - 2-4 tablespoons heavy cream

→ Chocolate Ganache

10 - 1 cup semi-sweet chocolate chips
11 - ⅓ cup heavy cream

# Instructions:

01 - Preheat oven to 350°F. Line cookie sheets with parchment paper.
02 - Mix cake mix, oil, and eggs until well combined.
03 - Drop 2-tablespoon portions 2 inches apart. Bake 10-12 minutes until edges set. Cool 5 minutes on sheet, then transfer to rack.
04 - Beat butter until smooth. Add powdered sugar, milk, mint extract, salt, and food coloring. Adjust consistency and color as needed.
05 - Heat cream and chocolate chips in microwave 45 seconds. Let rest 1 minute, then whisk until smooth. Cool 10-15 minutes.
06 - Spread mint frosting on cooled cookies, then top with ganache. Let set before serving.
