Easy Pink Sauce Pasta (Print Version)

# Ingredients:

→ Base

01 - 8 ounces uncooked pasta (rigatoni or penne preferred)
02 - 1 tablespoon olive oil
03 - 2 tablespoons butter

→ Aromatics & Seasonings

04 - ½ small onion, chopped finely
05 - ¼ teaspoon Italian seasoning
06 - 2-3 cloves garlic, minced

→ Sauce

07 - ¼ cup dry white wine
08 - ¼ cup tomato paste
09 - 1 cup heavy cream
10 - ½ cup freshly grated parmesan cheese
11 - Salt and pepper to taste

# Instructions:

01 - Boil pasta in salted water according to package directions until al dente
02 - Heat oil and butter in skillet. Cook onion and Italian seasoning 5-7 minutes until softened
03 - Add garlic, then wine and reduce. Stir in tomato paste and cream until smooth
04 - Simmer 5 minutes until thickened. Remove from heat and stir in parmesan
05 - Add cooked pasta to sauce, thinning with pasta water if needed. Season and serve

# Notes:

01 - Use quality tube tomato paste for best results
02 - Don't substitute cream with lower fat options
03 - Fresh grated parmesan works best
