Easy Sausage Tortellini Soup (Print Version)

# Ingredients:

01 - 1 pound hot Italian sausage.
02 - 3 carrots, diced.
03 - 1 large white onion, diced.
04 - 1 tablespoon minced garlic.
05 - 4 cups chicken stock.
06 - 29 ounces diced tomatoes (two 14.5 oz cans).
07 - 16 ounces cheese tortellini.
08 - 1 cup heavy cream.
09 - Parmesan cheese for serving.

# Instructions:

01 - Cook sausage until crispy, remove to drain.
02 - Cook carrots and onion 3 minutes. Add garlic 1 minute.
03 - Add stock and tomatoes, bring to boil.
04 - Stir in tortellini and sausage, cook 5 minutes until pasta tender.
05 - Remove from heat, stir in cream. Top with parmesan.

# Notes:

01 - Keeps 2 days refrigerated.
02 - Can freeze without pasta and cream.
03 - Cook pasta separately to prevent sogginess.
