01 - 3 large eggs, beaten
02 - 1/4 teaspoon kosher salt
03 - 1/4 teaspoon white pepper
04 - 3 tablespoons butter, divided
05 - 2 slices bread
06 - 1 slice cheddar cheese
07 - 2 slices deli ham

# Instructions:

01 - In a medium bowl, combine the beaten eggs, kosher salt, and white pepper. Whisk until well mixed.
02 - In a large skillet, melt 2 tablespoons of butter over medium heat, spreading it evenly across the pan surface.
03 - Use the remaining tablespoon of butter to spread on one side of each slice of bread. Set the buttered bread aside.
04 - Once the butter has melted in the skillet, pour in the egg mixture. Swirl the pan gently to help the eggs spread to the edges, creating an even layer.
05 - Place both slices of bread onto the cooking eggs with the buttered sides facing up. Position them so the bottom edges of the bread slices are touching each other.
06 - Cook the eggs and bread undisturbed until the eggs are no longer runny, approximately 5-7 minutes. The eggs should be fully set.
07 - Using a large spatula, carefully flip over the entire egg and bread combination. If the eggs are properly cooked, this should flip easily as one unit.
08 - Top one slice of the bread with the cheddar cheese slice, followed by the ham slices. Fold any excess egg over the ham.
09 - Fold the other slice of bread (with its portion of egg) over the ham and cheese to form a complete sandwich.
10 - Flip the sandwich once or twice and cook for 2-3 more minutes, or until the cheese is melted and the sandwich is nicely browned and heated through on both sides.
11 - Remove from the skillet and serve immediately while warm.
