English Muffin Breakfast Pizza (Print Version)

# Ingredients:

→ Base and Toppings

01 - 4 English muffins, split in half
02 - 4 large eggs
03 - ½ cup breakfast sausage, cooked and crumbled
04 - ½ cup mild cheddar cheese, shredded
05 - Dash of milk for eggs

→ Sausage Gravy

06 - 1 cup milk
07 - ¼ cup sausage drippings
08 - 2 tablespoons all-purpose flour
09 - ¼ teaspoon salt
10 - ¼ teaspoon black pepper

# Instructions:

01 - In a skillet over medium heat, cook breakfast sausage until well done and crumbly. Remove the cooked sausage but save ¼ cup of the drippings in the pan for your gravy.
02 - Keep the pan with drippings over medium heat. Whisk flour into the drippings and cook for 1-2 minutes until it turns golden brown. Gradually pour in milk while continuously whisking to prevent lumps. Cook until the mixture thickens into a creamy gravy, about 3-5 minutes. Season with salt and pepper.
03 - Split English muffins in half and lightly toast them in a toaster or under the broiler until just golden around the edges.
04 - In a separate pan, scramble eggs with a dash of milk until fluffy but still slightly moist. The eggs will cook more when broiled.
05 - Preheat your broiler. Place toasted English muffin halves on a baking sheet. Spread each with a spoonful of sausage gravy, then top with scrambled eggs, crumbled sausage, and shredded cheese. Broil for 1-2 minutes until the cheese melts and bubbles, watching carefully to prevent burning.
