Fried Egg Grilled Cheese (Print Version)

# Ingredients:

01 - 4 large eggs
02 - 4 slices thick Texas-style bread
03 - 2 slices Colby Jack cheese
04 - 2 slices pepper jack cheese
05 - Butter for cooking and spreading
06 - Salt and pepper to taste

# Instructions:

01 - Butter one side of each slice of bread and set aside on a plate.
02 - Heat a little butter in a frying pan over low heat. Crack the eggs into the pan and fry them to your preferred doneness. Season with salt and pepper, then remove from heat and set aside.
03 - In a separate frying pan, place one slice of bread buttered-side down. Add a slice of Colby Jack cheese on top.
04 - Place two fried eggs on top of the Colby Jack cheese, then add a slice of pepper jack cheese over the eggs.
05 - Top with another slice of bread, buttered-side up. Cover the pan with a lid to help melt the cheese.
06 - Cook until the bottom is golden brown and the cheese starts melting, then carefully flip and cook the other side until golden brown and the cheese is fully melted.
07 - Repeat the process with the remaining ingredients to make the second sandwich. Serve immediately while hot and the cheese is melty.

01 - Using thick Texas toast helps the sandwich hold up to the fried eggs without getting soggy.
02 - Covering the pan with a lid helps the cheese melt evenly while the bread gets crispy.
03 - Cook the eggs to your preference - runny yolks add extra richness to the sandwich.
