Frijoles de la Olla (Print Version)

# Ingredients:

01 - 2 cups pinto beans.
02 - 6 cups water.
03 - ¼ medium white onion.
04 - 1 garlic clove.
05 - ½ teaspoon kosher salt.

# Instructions:

01 - Rinse beans, cover with water, soak 3+ hours.
02 - Drain, rinse beans. Add to pot with water, onion, garlic.
03 - Boil, reduce to simmer. Cook covered 1½ hours.
04 - Add salt, cook 30 more minutes until tender.

# Notes:

01 - Only add boiling water if needed.
02 - Soaking optional but recommended.
03 - Keep heat medium-low.
