01 -
Line a baking sheet or tray with parchment paper. Make sure it's small enough to fit in your freezer with room to spare. If you're using refrigerated peanut butter, let it come to room temperature for easier mixing.
02 -
In a medium mixing bowl, add the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Using a sturdy spoon or spatula, stir the mixture until smooth and well combined. Make sure no streaks of peanut butter remain. If the mixture seems too thick, you can add a teaspoon of milk or additional yogurt to thin it slightly.
03 -
Add the mini chocolate chips to the yogurt-peanut butter mixture. If you're using chopped dark chocolate instead, make sure the pieces are small enough to distribute evenly. Gently fold the chocolate into the mixture until evenly distributed. If using any optional add-ins like cinnamon, chia seeds, or chopped nuts, fold those in now as well.
04 -
Using a tablespoon measure or small cookie scoop, drop 1 to 1.5 tablespoon portions of the mixture onto the parchment-lined tray. Space them about an inch apart to prevent them from freezing together. If you prefer a neater appearance, you can use the back of a spoon to gently smooth the tops of each bite.
05 -
Place the tray in the freezer, making sure it's on a flat surface. Freeze the bites for 1-2 hours, or until they're completely firm to the touch. The exact time will depend on the temperature of your freezer and the size of your bites.
06 -
Once the bites are fully frozen, transfer them to a freezer-safe container or zip-top bag. If you need to stack them, place a sheet of parchment paper between layers to prevent sticking. Seal the container tightly to prevent freezer burn.
07 -
The frozen bites can be enjoyed straight from the freezer as a cool, protein-rich treat. They're perfect for a quick snack, post-workout fuel, or a healthier dessert option. Allow them to sit at room temperature for about 30 seconds before eating for the best texture.
