Fudgy Brownie Cookies (Print Version)

# Ingredients:

01 - ½ cup (60g) all-purpose flour.
02 - ¼ cup (25g) cocoa powder.
03 - ½ teaspoon baking powder.
04 - ¼ teaspoon salt.
05 - 7 ounces (200g) dark chocolate, chopped.
06 - ¼ cup (56g) unsalted butter.
07 - 2 large eggs, room temperature.
08 - ¾ cup (150g) light brown sugar.
09 - 1 teaspoon vanilla extract.

# Instructions:

01 - Preheat oven to 350°F. Line baking trays with parchment.
02 - Whisk together flour, cocoa powder, baking powder, and salt.
03 - Microwave chocolate and butter in 30-second intervals until smooth.
04 - Beat eggs and brown sugar for 5 minutes until pale and tripled in volume.
05 - Add melted chocolate and vanilla to eggs, then fold in dry ingredients.
06 - Refrigerate batter for 15 minutes until thickened.
07 - Scoop and bake one tray at a time for 10-12 minutes until tops are shiny and cracked.
