Funnel Cake Fries (Print Version)

# Ingredients:

01 - 1 cup buttermilk pancake mix.
02 - ¼ cup cold water, plus 1-2 tablespoons if needed.
03 - 1 tablespoon granulated sugar.
04 - ¼ teaspoon salt.
05 - 1 teaspoon vanilla extract.
06 - Vegetable oil for frying.
07 - Powdered sugar for dusting.

# Instructions:

01 - Whisk pancake mix, water, sugar, salt and vanilla until just combined. Add water if needed for cake-like consistency.
02 - Add batter to piping bag with circle tip or zip top bag with corner cut. Rest in tall glass while oil heats.
03 - Heat 3 inches oil to 340-350°F in deep pan.
04 - Pipe 5-6 inch strips into oil. Fry 20-30 seconds per side until golden.
05 - Drain on paper towels, dust with powdered sugar. Serve immediately.

# Notes:

01 - Can add toppings like caramel, fruit, chocolate.
02 - Try cinnamon sugar coating.
03 - Stores 2 days at room temp.
