Garlic Parmesan Chicken Potatoes (Print Version)

# Ingredients:

01 - 4 boneless skinless chicken breasts (or thighs).
02 - 1 teaspoon Italian seasoning.
03 - ½ teaspoon smoked paprika.
04 - ½ teaspoon salt (for chicken).
05 - ¼ teaspoon black pepper (for chicken).
06 - 1 tablespoon olive oil (for chicken).
07 - 1.5 pounds baby Yukon Gold or red potatoes, halved.
08 - 3 tablespoons olive oil (for potatoes).
09 - 4 cloves garlic, minced.
10 - ⅓ cup grated Parmesan cheese.
11 - ½ teaspoon salt (for potatoes).
12 - ¼ teaspoon black pepper (for potatoes).
13 - 1 tablespoon fresh parsley, chopped (optional).

# Instructions:

01 - Preheat oven to 400°F. Line baking sheet with parchment paper.
02 - Mix Italian seasoning, paprika, salt, and pepper. Rub chicken with oil and seasonings.
03 - Toss halved potatoes with oil, garlic, Parmesan, salt, and pepper.
04 - Place chicken on one side of baking sheet, potatoes on other side in single layer.
05 - Roast 25-30 minutes, flipping potatoes halfway. Chicken should reach 165°F.
06 - Optional: Add extra Parmesan and broil for golden crust. Garnish with parsley.
