Preheat the oven to 400°F.

In a large bowl, combine the quartered red potatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat evenly.

Add half of the grated Parmesan cheese and briefly toss the mixture again before transferring to a casserole dish.

Cover the casserole dish with tin foil and bake in the preheated oven for 20 minutes.

Remove the tin foil, sprinkle the remaining Parmesan cheese over the potatoes, and return the dish to the oven, uncovered, for an additional 20 minutes.

Remove the potatoes from the oven and serve with freshly chopped parsley for garnish.
