Garlic Parmesan Roasted Potatoes (Print Version)

# Ingredients:

01 - 48 ounces red potatoes, quartered
02 - 1/4 cup olive oil
03 - 3 teaspoons minced garlic (about 3 cloves)
04 - 1 teaspoon dried oregano
05 - 1 teaspoon salt
06 - 1 teaspoon black pepper
07 - 1/2 cup grated Parmesan cheese
08 - Chopped parsley (for garnish)

# Instructions:

01 - Preheat the oven to 400°F.
02 - In a large bowl, combine the quartered red potatoes, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to coat evenly.
03 - Add half of the grated Parmesan cheese and briefly toss the mixture again before transferring to a casserole dish.
04 - Cover the casserole dish with tin foil and bake in the preheated oven for 20 minutes.
05 - Remove the tin foil, sprinkle the remaining Parmesan cheese over the potatoes, and return the dish to the oven, uncovered, for an additional 20 minutes.
06 - Remove the potatoes from the oven and serve with freshly chopped parsley for garnish.
