Mint Chocolate Cookies (Print Version)

# Ingredients:

01 - 1 box (15.25 oz) chocolate cake mix.
02 - 1/2 cup canola oil.
03 - 2 large eggs.
04 - 1/2 cup unsalted butter, room temperature.
05 - 2 cups powdered sugar.
06 - 1 teaspoon mint extract.
07 - 1/4 teaspoon salt.
08 - Green food coloring.
09 - 2-4 tablespoons heavy cream.
10 - 1 cup semi-sweet chocolate chips.
11 - 1/3 cup heavy cream.

# Instructions:

01 - Heat oven to 350°F.
02 - Line cookie sheets with parchment paper.
03 - Mix cake mix, oil, and eggs.
04 - Drop 2 tablespoon scoops onto prepared sheets.
05 - Bake for 10-12 minutes.
06 - Cool cookies on sheets for 5 minutes, then transfer to a wire rack.
07 - Beat butter until smooth. Add powdered sugar, 2 tablespoons of cream, mint extract, and salt.
08 - Mix in green food coloring.
09 - Adjust consistency with additional cream as needed.
10 - Spread frosting on cooled cookies.
11 - Pour hot cream over chocolate chips and let sit for 1 minute.
12 - Whisk the mixture until smooth.
13 - Let ganache cool for 10-15 minutes.
14 - Spread ganache on frosted cookies.
15 - Let cookies set before serving.
