Greek White Pizza (Print Version)

# Ingredients:

01 - 1 ball pizza dough, store-bought or homemade.
02 - 1/2 cup fresh ricotta cheese.
03 - 1/2 cup cream cheese, room temperature.
04 - 1/4 cup grated Parmesan.
05 - 1/4 cup heavy cream.
06 - 1 whole head of garlic.
07 - 2 cups fresh spinach, chopped.
08 - 1/2 cup crumbled feta.
09 - 1/2 cup shredded mozzarella.
10 - 2 tablespoons olive oil, divided.
11 - 1 teaspoon dried oregano.
12 - 1/2 teaspoon red pepper flakes (optional).

# Instructions:

01 - Cut top off garlic head. Add oil and salt, wrap in foil, and roast at 400°F until soft, about 35 minutes.
02 - Mix ricotta, softened cream cheese, Parmesan, cream, and roasted garlic paste. Season well.
03 - Heat oven to 475°F. Roll dough on floured surface to desired size.
04 - Spread white sauce, layer with spinach, sprinkle cheeses, add oregano and pepper flakes. Drizzle oil on top.
05 - Cook until crust turns golden and cheese melts, about 12-15 minutes.

# Notes:

01 - Can add olives or sun-dried tomatoes for extra flavor.
02 - Use pizza stone if you have one for crispier crust.
