# Ingredients:

→ Hot Honey Chicken

01 - 1 pound boneless, skinless chicken thighs
02 - ¼ cup olive oil
03 - 2 tablespoons freshly squeezed lemon juice
04 - 2 tablespoons hot honey
05 - 1 teaspoon freshly grated lemon zest
06 - 1 garlic clove, minced
07 - Kosher salt and freshly ground black pepper, to taste

→ Corn Salad

08 - 6 ears of sweet corn, kernels removed from the cob
09 - 2 green onions, thinly sliced
10 - ¼ cup chopped fresh cilantro
11 - ¼ cup sour cream
12 - 2 tablespoons freshly squeezed lime juice
13 - 1 tablespoon freshly grated lime zest
14 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - Place the chicken in a glass dish or resealable bag. Whisk together olive oil, lemon juice, hot honey, lemon zest, garlic, and a pinch of salt and pepper. Pour the mixture over the chicken and marinate for at least 30 minutes or up to overnight.
02 - Preheat the grill to the highest setting. Once hot, place the chicken on the grill and cook for 5 minutes until it easily flips. Flip the chicken and grill for an additional 5 to 6 minutes, or until the internal temperature reaches 165°F. Let the chicken rest for 5 to 10 minutes before serving. Drizzle with extra hot honey.
03 - Place the corn, green onions, and cilantro in a bowl. In a smaller bowl, whisk together sour cream, lime juice, lime zest, and a pinch of salt and pepper. Stir the sour cream mixture into the corn until combined. Taste and adjust seasoning as needed.
