Tropical Banana Bread (Print Version)

# Ingredients:

01 - 1 cup white granulated sugar.
02 - 1/2 cup unsalted butter, softened.
03 - 2 large eggs.
04 - 3 ripe bananas, mashed.
05 - 2 cups all-purpose flour.
06 - 1 tsp baking powder.
07 - 1/2 tsp baking soda.
08 - 1/2 tsp salt.
09 - 1/2 tsp ground cardamom.
10 - 1/2 cup unsweetened coconut flakes.
11 - 1/2 cup canned crushed pineapple, well-drained.

# Instructions:

01 - Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan with non-stick spray.
02 - In a large bowl, cream together sugar and butter. Add eggs, one at a time, mixing well after each addition. Stir in mashed bananas.
03 - In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cardamom.
04 - Gradually add the dry ingredients to the banana mixture, mixing until fully combined.
05 - Stir in the coconut flakes and drained pineapple.
06 - Pour batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
07 - Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!.
