Hawaiian BBQ Chicken Flatbread (Print Version)

# Ingredients:

→ For the Base

01 - 1 rectangular flatbread
02 - 1 tbsp olive oil

→ For the Toppings

03 - ½ cup BBQ sauce, divided
04 - 1¼ cups hand-shredded Colby Jack cheese
05 - 1 cup rotisserie chicken, shredded or cubed
06 - ¼ cup red onion, thinly sliced
07 - ¼ cup fresh pineapple, diced small
08 - 1 tbsp garlic powder
09 - Salt and pepper to taste

→ For Garnish

10 - 2 tbsp green onion, chopped

# Instructions:

01 - Turn your oven to 400 degrees. Line a baking sheet with parchment paper.
02 - Brush olive oil all over the top of your flatbread and place it on the lined baking sheet. Pop it in the center of the oven for 5 minutes until it starts getting a little crispy around the edges.
03 - Take the flatbread out of the oven and spread a quarter cup of BBQ sauce evenly across the surface.
04 - Sprinkle 1 cup of the shredded Colby Jack cheese over the BBQ sauce.
05 - In a small bowl, toss your chicken pieces with the garlic powder, salt, and pepper. Spread the seasoned chicken evenly over the cheese layer.
06 - Sprinkle the remaining quarter cup of cheese on top of the chicken.
07 - Scatter the sliced red onion over everything, then distribute the pineapple chunks across the top.
08 - Drizzle the rest of the BBQ sauce over the whole pizza. Put it back in the oven on the center rack and bake for 10 to 15 minutes until the cheese is melted and bubbly.
09 - Take it out and sprinkle the chopped green onions on top. Slice it up and serve while it's hot.

# Notes:

01 - Using rotisserie chicken makes this super quick and easy.
02 - Fresh pineapple tastes best, but canned pineapple chunks work fine if you drain them well.
03 - Hand-shredded cheese melts better than pre-shredded because it doesn't have anti-caking agents.
04 - Toasting the flatbread first keeps it from getting soggy under all the toppings.
05 - You can use naan bread or even a store-bought pizza crust if you don't have flatbread.
06 - This is great for game day, quick dinners, or as an appetizer cut into smaller pieces.
