Healthy Breakfast Blueberry Oatmeal Crumb Bars (Print Version)

# Ingredients:

→ Base & Crumble

01 - 1 cup plain flour
02 - 3/4 cup old-fashioned oats
03 - 1/2 cup white sugar
04 - 1/4 cup dark brown sugar
05 - 1/2 teaspoon ground cinnamon
06 - 1/4 teaspoon sea salt
07 - 1/2 cup unsalted butter, melted
08 - 1 large egg yolk
09 - 1 tablespoon dark brown sugar (extra)

→ Blueberry Layer

10 - 2 cups blueberries, fresh or frozen
11 - 2 tablespoons fresh lemon juice
12 - 1/4 cup white sugar
13 - 2 teaspoons cornstarch

# Instructions:

01 - Preheat oven to 350°F. Line 8x8 pan with foil and grease with butter.
02 - Mix flour, oats, sugars, cinnamon, and salt. Add melted butter and egg yolk.
03 - Reserve 1 cup mixture. Press remainder into prepared pan.
04 - Mix blueberries, lemon juice, sugar, and cornstarch. Spread over base.
05 - Mix extra brown sugar into reserved mixture. Crumble over blueberries.
06 - Bake 40-45 minutes until bubbly and golden. Cool completely (3+ hours) before cutting.

# Notes:

01 - Don't use quick or instant oats
02 - Add 10-15 minutes if using frozen berries
03 - Best cut when fully cooled
