Date-Sweetened Cookie Sandwiches (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 cup almond flour
02 - 1/3 cup flax meal
03 - 1/3 cup runny almond butter
04 - 1 cup medjool dates, pitted
05 - 1/3 cup cocoa powder
06 - 1/3 cup dairy-free milk
07 - 1 teaspoon vanilla extract

→ Filling

08 - 1/3 cup raw cashews, soaked 2 hours in hot water
09 - 1/3 cup coconut cream
10 - 1-2 tablespoons maple syrup (optional)
11 - 1/2 cup vegan cream cheese

# Instructions:

01 - Blend almond flour, flax, almond butter, dates, cocoa, milk and vanilla in food processor until smooth dough forms.
02 - Roll tablespoon portions into balls, flatten into cookie shapes.
03 - Blend drained cashews with coconut cream and maple syrup until smooth. Add cream cheese, pulse until creamy.
04 - Spread filling on half the cookies. Top with remaining cookies to make sandwiches.
05 - Freeze for 1 hour, then assemble sandwiches and freeze 30 minutes more.
