Healthy Penne Alla Vodka (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1 pound dry penne pasta
02 - 28 oz canned crushed tomatoes
03 - 1 cup cottage cheese (4% milkfat recommended)

→ Aromatics

04 - 1 tablespoon olive oil
05 - ½ cup diced onion
06 - 1 tablespoon minced garlic (about 3 cloves)

→ Seasonings

07 - 2 tablespoons vodka (or ½ teaspoon white wine vinegar)
08 - ⅛ teaspoon salt
09 - ⅛ teaspoon pepper
10 - ½ teaspoon dried basil (or ¼ cup fresh chopped)
11 - ½ cup grated parmesan cheese

→ Additional

12 - ¼ cup pasta water (reserved)

# Instructions:

01 - Blend crushed tomatoes and cottage cheese until smooth and creamy pink. Set aside.
02 - Bring large pot of water to boil for pasta.
03 - Heat olive oil in pan over medium heat. Cook onions and garlic 3-5 minutes until translucent.
04 - Add vodka to aromatics and cook until alcohol smell dissipates, about 5 minutes.
05 - Add tomato-cheese mixture, seasonings, and simmer on medium heat.
06 - Cook penne until al dente. Reserve ¼ cup pasta water before draining.
07 - Remove sauce from heat. Add pasta, parmesan, and reserved water. Stir until smooth and well-coated.

01 - Cook pasta al dente to avoid mushiness
02 - Can be stored for 4 days in refrigerator
03 - Can add chicken, sausage, or shrimp for extra protein
04 - Can use gluten-free pasta if needed
