High Protein Broccoli Cheddar Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon butter
02 - 1 large yellow onion, diced
03 - 2 large carrots, peeled and diced
04 - 1 stalk celery, diced
05 - 2 cloves garlic, minced

→ Thickeners & Seasonings

06 - ¼ cup all-purpose flour (or gluten-free flour)
07 - ½ teaspoon smoked paprika
08 - Salt and pepper to taste

→ Main Ingredients

09 - 3 cups vegetable broth (not-chicken style recommended)
10 - 4 cups chopped broccoli
11 - 2 cups 1% milk
12 - 4 ounces (1 cup) shredded cheddar cheese
13 - 1 cup low fat cottage cheese, blended

# Instructions:

01 - Melt butter in a large pot. Cook onion, carrot, and celery for 10 minutes, then add garlic and cook 1 minute more
02 - Stir in smoked paprika and flour, cooking for 1 minute until vegetables are coated
03 - Add broth and broccoli. Bring to simmer and cook 8-9 minutes until broccoli softens
04 - Stir in milk and warm over low heat. Add blended cottage cheese and cheddar, stirring until melted
05 - Blend 1 cup of soup and return to pot, or use immersion blender to partially blend. Season with salt and pepper

# Notes:

01 - Start with 3 cups broth and add more if needed for desired thickness
02 - Keep heat low after adding dairy to prevent curdling
