Homemade Tomato Soup (Print Version)

# Ingredients:

01 - 2 tablespoons unsalted butter.
02 - 2 tablespoons olive oil.
03 - 1 sweet onion, diced.
04 - 1 large garlic clove.
05 - 2 tablespoons all-purpose flour.
06 - 1½ cups chicken or vegetable stock, warmed.
07 - 28 ounces canned whole tomatoes.
08 - 2 tablespoons tomato paste.
09 - 1 teaspoon white sugar.
10 - ½ teaspoon fresh thyme (or 1 tsp dried).
11 - ½ teaspoon black pepper.
12 - 1 teaspoon salt.

# Instructions:

01 - Heat butter and oil in Dutch oven. Cook onions until soft.
02 - Coat onions with flour, gradually stir in warm stock.
03 - Add tomatoes, paste and seasonings. Simmer 15 minutes.
04 - Use immersion blender or food processor until smooth.

# Notes:

01 - Can use gluten-free flour.
02 - Serve with grilled cheese.
