01 -
Preheat your oven to 375 degrees (190°C).
02 -
Slice each salmon fillet horizontally to create a pocket - don't cut all the way through! You want to create a space to hold the stuffing.
03 -
In a pan, melt the butter and sauté the minced garlic until fragrant. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove from heat and chop the cooked shrimp into smaller pieces.
04 -
In a bowl, mix together the chopped shrimp, chopped spinach, cream cheese, and shredded cheese. Season lightly with salt and pepper.
05 -
Carefully stuff the shrimp and cheese mixture into the salmon pockets, distributing it evenly between the two fillets. Place the stuffed salmon in a baking dish.
06 -
In a small bowl, mix together the honey, lemon juice, paprika, Italian seasoning, salt, and pepper. Brush this glaze generously over the top of the salmon fillets.
07 -
Arrange lemon slices around the fish in the baking dish. Bake for 15 to 20 minutes, until the salmon is cooked through and flakes easily with a fork, and the glaze is bubbling.
08 -
Serve the stuffed salmon hot, garnished with the roasted lemon slices. This is restaurant-quality amazing!
