While the chops are baking, mix honey, whole grain mustard, yellow mustard, vinegar, garlic powder, smoked paprika, salt, and pepper in a bowl. Taste and adjust the mustard or honey amount to your preference.

Spoon the honey mustard sauce over the partially cooked pork chops. Switch oven to broil on high setting and cook for an additional 5-10 minutes, or until the pork chops are cooked through and the sauce is sticky and slightly caramelized.
