Spread butter on one side of each bread slice.

On the non-buttered side of two slices of bread, layer 2 slices of cheddar cheese, apple slices, bacon, and drizzle with honey. Add Dijon mustard if using. Top with remaining cheese slices and bread, buttered side up.

Heat a skillet over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Remove from skillet and let cool slightly before slicing.
