Hotcakes (Print Version)

# Ingredients:

01 - 2 cups (250g) all-purpose flour.
02 - 4 tablespoons white sugar.
03 - 2 teaspoons baking powder.
04 - ½ teaspoon baking soda.
05 - ½ teaspoon salt.
06 - 2 large eggs, room temperature.
07 - 4 tablespoons unsalted butter, melted.
08 - 1 cup milk, room temperature.
09 - 1 teaspoon vanilla extract.
10 - Butter for cooking.

# Instructions:

01 - Sift flour and mix with sugar, baking powder, baking soda, and salt.
02 - Whisk together eggs, melted butter, milk and vanilla.
03 - Add wet to dry ingredients, whisk gently until just mixed. Don't overmix.
04 - Heat griddle with butter, cook ¼ cup portions until bubbles form, then flip.
05 - Cook other side until browned. Serve immediately or keep warm in oven.

01 - Use room temperature ingredients.
02 - Don't overmix batter.
03 - Small lumps are okay.
