Sugar Cream Pie (Print Version)

# Ingredients:

01 - 1 single pie crust dough.
02 - 1 cup sugar.
03 - 1/4 cup cornstarch.
04 - 2 cups 2% milk.
05 - 1/2 cup butter, cubed.
06 - 1 teaspoon vanilla extract.
07 - 1/4 teaspoon ground cinnamon.

# Instructions:

01 - Heat oven to 450°F.
02 - Roll dough into 1/8-inch circle and place in a 9-inch pie plate.
03 - Trim edges to 1/2 inch, flute the rim, and chill for 30 minutes.
04 - Cover crust with double foil and add pie weights.
05 - Bake on lower rack for 15-20 minutes until edges turn light golden.
06 - Remove weights and foil, then bake 3-6 minutes more until bottom browns.
07 - Cool crust and lower oven to 375°F.
08 - Mix sugar and cornstarch in a large saucepan.
09 - Stir in milk until smooth and bring to boil. Reduce heat, cook while stirring for 2 minutes until thick.
10 - Remove from heat, stir in butter and vanilla.
11 - Pour into crust and sprinkle with cinnamon.
12 - Bake 15-20 minutes until golden.
13 - Cool then chill in the fridge.
