Instant Pot Short Ribs (Print Version)

# Ingredients:

01 - 6 pounds short ribs (about 8 pieces).
02 - Salt for seasoning.
03 - 1 medium onion, thick sliced.
04 - 1/2 cup bourbon.
05 - 1 tablespoon paprika.
06 - 1 teaspoon cayenne pepper.
07 - 3 tablespoons sugar.
08 - 3 tablespoons balsamic vinegar.
09 - 6 garlic cloves.
10 - 2-3 fresh thyme sprigs.
11 - 1 cup beef stock.
12 - 1 tablespoon cornstarch.
13 - 1 tablespoon water.

# Instructions:

01 - Rinse short ribs in cold water. Pat dry and season well with salt.
02 - Heat oil in Instant Pot on high. Brown ribs in batches, about 3 minutes per side.
03 - Cook onions in pot. Add bourbon and scrape bottom. Mix in spices and vinegar.
04 - Return ribs to pot with garlic and thyme. Add stock. Pressure cook 45 minutes.
05 - Remove ribs. Mix cornstarch with water and stir into sauce until thick.
06 - Return ribs to sauce. Either serve now or chill to remove fat later.

# Notes:

01 - Can adjust sugar and spice to taste.
02 - Great with mashed potatoes.
03 - Chilling helps remove excess fat.
