Irish Cheese Toastie (Print Version)

# Ingredients:

01 - 6 slices bread (brown, potato, white, or multi-grain)
02 - 2 tablespoons butter, softened
03 - 3 large eggs
04 - 2 teaspoons Dijon mustard
05 - 2 teaspoons Worcestershire sauce
06 - 7-8 ounces aged Irish cheddar, shredded (or sharp cheddar)
07 - 1/2 teaspoon cracked black pepper
08 - 1 tablespoon fresh chives, chopped

# Instructions:

01 - Preheat the oven to 425°F (220°C). Set out a large baking sheet.
02 - Arrange the slices of bread on the baking sheet. Spread the softened butter evenly over the top side of each slice, then flip them over so the buttered side is facing down on the baking sheet.
03 - In a medium mixing bowl, combine the eggs, Dijon mustard, and Worcestershire sauce. Whisk well until fully incorporated. Then stir in the shredded cheddar cheese and cracked black pepper, mixing until everything is evenly combined.
04 - Spoon the cheese mixture evenly over each slice of bread (on the unbuttered side facing up). Use the back of a spoon to spread it into an even layer, making sure to cover the bread completely.
05 - Bake in the preheated oven for 8 to 12 minutes, until the edges of the bread are golden brown and the center of the cheese mixture is puffed up. The cheese should be melted and beginning to brown on top.
06 - Remove from the oven, sprinkle with fresh chopped chives, and serve immediately while hot and bubbly.

01 - This Irish-style cheese toastie is different from a grilled cheese as the egg mixture creates a savory, soufflé-like layer on top of the bread.
02 - Traditional Irish cheese toasties often use Kerrygold or other aged Irish cheddar, but any good quality sharp cheddar works well.
