Cheesy Italian Beef Sandwiches (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2.5 lbs top round roast
02 - 3 bell peppers, cut into strips
03 - 8 hoagie rolls
04 - 8 slices provolone cheese
05 - 16 jar sliced pepperoncini

→ Sauce & Seasonings

06 - 2 cups low sodium beef broth
07 - 1 packet au jus gravy mix
08 - 1 (0.7-oz) pack Italian salad dressing mix

# Instructions:

01 - Mix broth and au jus seasoning together in your crock pot. Add the round roast and sliced bell peppers. Sprinkle them with the packet of Italian seasoning.
02 - Cover and cook on high for 4 to 5 hours or on low for 8 to 10 hours.
03 - Remove the roast from the crock pot and shred it with two forks. Return meat to the crock pot.
04 - Assemble your sandwiches by laying cheese on the bottom of the roll, topping it with meat and peppers, then adding pepperoncini on top. If you want, add a little of the cooking liquid to the top half of the sub roll, or you can serve the broth in a bowl to dip the sandwich in.

# Notes:

01 - Top-round roast is a leaner, more economical choice than chuck roast.
02 - If using chuck roast, trim excess fat to prevent greasy broth.
